1 cup apple cider
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter
1 large egg
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
Cream cheese for filling
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract, and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the apple cider. Mix until just combined, being careful not to overmix.
In another bowl, beat the cream cheese until smooth. Optionally, add sugar and vanilla to sweeten, then set aside.
Using a cookie scoop or tablespoon, drop spoonfuls of cookie dough onto the prepared baking sheets. Press an indentation in the center of each cookie and fill it with the cream cheese mixture.
Bake for 12-15 minutes until lightly golden on the edges. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack.
