2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 cup milk
1 large egg
2 tbsp melted butter
1 cup chopped apples
Nuts (walnuts or pecans) – optional
Raisins or cranberries – optional
Maple syrup – for garnish
Whipped cream – for garnish
Sliced bananas – for garnish
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
In another bowl, whisk together the milk, egg, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix; a few lumps are okay!
Gently fold in the chopped apples until evenly distributed throughout the batter.
Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or butter.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side.
Transfer the pancakes to a plate and keep warm while you repeat with the remaining batter. Serve with maple syrup, fresh fruit, or your favorite topping!
