  • Raisins or cranberries – optional

  • Sliced bananas – for garnish

  • Instructions

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  • In another bowl, whisk together the milk, egg, and melted butter until smooth.
  • Pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix; a few lumps are okay!
  • Gently fold in the chopped apples until evenly distributed throughout the batter.
  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side.
  • Transfer the pancakes to a plate and keep warm while you repeat with the remaining batter. Serve with maple syrup, fresh fruit, or your favorite topping!
