- 1 cup quinoa
- 2 cups water or almond milk
- 2 medium apples (diced)
- 1 teaspoon cinnamon
- 2 tablespoons maple syrup or honey (optional)
- 1/2 cup Greek yogurt or dairy-free yogurt
- 1/4 cup chopped nuts (optional)
Instructions
- Rinse the quinoa under cold water in a fine mesh strainer.
- In a medium saucepan, combine the rinsed quinoa and 2 cups of water (or almond milk). Bring it to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the liquid is absorbed and quinoa is fluffy.
- While the quinoa is cooking, prepare the apples by adding them to a non-stick skillet with a sprinkle of cinnamon and maple syrup (if using), and cook for 5-7 minutes until tender.
- Layer a few spoonfuls of quinoa in serving glasses or bowls.
- Layer in sautéed apples, then add a dollop of yogurt on top.
- Repeat layers until filled, finishing with yogurt on top.
- Top with your choice of nuts and a sprinkle of cinnamon, and garnish with fresh mint leaves if desired.
- Serve immediately or chill for later.
