  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.
  • In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until well blended.
  • In another bowl, beat the eggs and add granulated sugar, brown sugar, oil, and vanilla extract. Mix well until combined.
  • Add the wet ingredients to the dry ingredients, stirring gently to combine. Fold in zucchini, apple, and nuts (if using).
  • Fill each muffin cup about 2/3 full.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
