  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and sliced apples (e.g., Granny Smith or Honeycrisp)
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

  • Instructions

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, softened butter, granulated sugar, and salt. Use a fork or your fingers to mix until crumbly. Press the mixture into the bottom of a greased 9×9-inch square baking dish and bake for 10-12 minutes, or until lightly golden brown. Set aside to cool.
  • In another bowl, beat the softened cream cheese with the granulated sugar until smooth. Add eggs, one at a time, mixing in between each addition, and then stir in the vanilla extract. Once well combined, pour over the cooled crust.
  • In a separate bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice until evenly coated. Layer the spiced apples over the cheesecake mixture.
  • Return your baking dish to the oven and bake for an additional 25-30 minutes, or until the cheesecake is set and the apple topping is bubbly.
  • Allow the bars to cool completely in the baking dish before slicing into squares. You can serve them chilled or at room temperature!
