1 ½ cups all-purpose flour
½ cup unsalted butter, softened
¼ cup granulated sugar
¼ teaspoon salt
16 oz cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups peeled and sliced apples (e.g., Granny Smith or Honeycrisp)
½ cup brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, softened butter, granulated sugar, and salt. Use a fork or your fingers to mix until crumbly. Press the mixture into the bottom of a greased 9×9-inch square baking dish and bake for 10-12 minutes, or until lightly golden brown. Set aside to cool.
In another bowl, beat the softened cream cheese with the granulated sugar until smooth. Add eggs, one at a time, mixing in between each addition, and then stir in the vanilla extract. Once well combined, pour over the cooled crust.
In a separate bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice until evenly coated. Layer the spiced apples over the cheesecake mixture.
Return your baking dish to the oven and bake for an additional 25-30 minutes, or until the cheesecake is set and the apple topping is bubbly.
Allow the bars to cool completely in the baking dish before slicing into squares. You can serve them chilled or at room temperature!
