Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a larger bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Using a tablespoon, scoop out portions of dough and roll into balls. Place them onto the prepared baking sheets.
- Press your thumb into the center of each ball to create an indent.
- Spoon a small amount of apple pie filling into each thumbprint.
- Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
