6–8 medium apples (such as Granny Smith or Honeycrisp)
1 cup unsweetened apple cider
¾ cup granulated sugar
1 tablespoon lemon juice
2 tablespoons cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon butter
1 package refrigerated pie crusts
Optional: 1/4 teaspoon allspice, chopped pecans or walnuts
Instructions
Preheat your oven to 425°F (220°C).
Unroll one of the pie crusts and fit it into a 9-inch pie pan. Press it gently into the corners.
Core and slice the apples into thin wedges. In a large mixing bowl, combine the apple slices with lemon juice, ½ cup sugar, cornstarch, cinnamon, nutmeg, and allspice (if using). Toss to coat the apples thoroughly.
Pour the apple cider over the apple mixture, stirring gently to combine.
Pour the apple filling into the prepared crust, spreading it evenly. Dot the top with small pieces of butter.
Unroll the second pie crust and carefully place it over the filling. Cut slits into the top crust for venting. Trim any excess crust and crimp the edges to seal.
Sprinkle the remaining ¼ cup of sugar over the crust for a lovely golden finish.
Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
Let the pie cool for at least 2 hours before serving to allow the filling to set.
