  • 1 cup unsweetened apple cider
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon butter
  • 1 package refrigerated pie crusts
  • Optional: 1/4 teaspoon allspice, chopped pecans or walnuts

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • Unroll one of the pie crusts and fit it into a 9-inch pie pan. Press it gently into the corners.
  • Core and slice the apples into thin wedges. In a large mixing bowl, combine the apple slices with lemon juice, ½ cup sugar, cornstarch, cinnamon, nutmeg, and allspice (if using). Toss to coat the apples thoroughly.
  • Pour the apple cider over the apple mixture, stirring gently to combine.
  • Pour the apple filling into the prepared crust, spreading it evenly. Dot the top with small pieces of butter.
  • Unroll the second pie crust and carefully place it over the filling. Cut slits into the top crust for venting. Trim any excess crust and crimp the edges to seal.
  • Sprinkle the remaining ¼ cup of sugar over the crust for a lovely golden finish.
  • Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Let the pie cool for at least 2 hours before serving to allow the filling to set.
