Ingredients

  • 3 medium Zucchini, sliced
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup Breadcrumbs
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchini into thin rounds or half-moons and sprinkle with salt. Let sit for 10 minutes, then pat dry.
  • In a skillet, heat olive oil and sauté minced garlic until fragrant.
  • Combine zucchini, sautéed garlic, cheddar cheese, half of the Parmesan, breadcrumbs, olive oil, salt, and pepper in a bowl.
  • Transfer the mixture to a greased baking dish.
  • Sprinkle remaining Parmesan and optional breadcrumbs on top.
  • Bake for 25-30 minutes until golden brown and the zucchini is tender.
  • Cool for a few minutes before serving warm.
