4 medium zucchini
2 cups marinara sauce
1 cup breadcrumbs
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried Italian herbs (oregano, basil, thyme)
Red pepper flakes (optional)
Mushrooms (optional)
Spinach or kale (optional)

Instructions
Begin by preheating your oven to 375°F (190°C). While the oven heats, wash and dry the zucchini. Slice them into rounds, about ¼ inch thick.
Place the sliced zucchini in a colander and sprinkle with salt. Allow it to sit for about 10 minutes to draw out excess moisture.
In a medium saucepan, heat the marinara sauce over medium heat. Add a pinch of salt, black pepper, and the dried Italian herbs to flavor the sauce.
In a baking dish (about 9×13 inches), spread a thin layer of marinara sauce on the bottom.
Start layering the zucchini slices over the sauce, slightly overlapping them. Spoon some marinara sauce over this first layer, then sprinkle with mozzarella and breadcrumbs.
Continue layering—zucchini, marinara, mozzarella, breadcrumbs—until all ingredients are used up, ending with a layer of sauce and mozzarella on top.
Sprinkle the grated Parmesan over the top layer and drizzle with olive oil.
Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until golden brown and bubbly.
Allow the dish to sit for about 10 minutes after removing it from the oven. Garnish with fresh basil or parsley before serving.
