1 cup cooked shredded chicken
1/2 cup BBQ sauce
2 slices of bread
1 cup shredded cheese (Cheddar, Monterey Jack, or a mix)
1–2 tablespoons butter
Optional: Red onion, sliced, Pickles, Jalapeños
Special Garnishes: Fresh cilantro or parsley, Extra BBQ sauce
Instructions
Prepare the chicken: Cook your chicken (grilling or poaching works well), then shred it. Mix with BBQ sauce until entirely coated.
Assemble the sandwich: Take one slice of bread and butter one side. On the unbuttered side, layer shredded BBQ chicken and cheese. Top with the second slice of bread, buttered side facing up.
Cook the sandwich: Heat a skillet over medium heat. Once hot, add the assembled sandwich. Cook until the first side is golden brown, about 3-4 minutes.
Flip it carefully: Using a spatula, flip the sandwich over and cook the other side until golden brown and cheese is melted, about another 3-4 minutes. If needed, you can cover the skillet for a minute to help the cheese melt faster.
Serve: Once done, remove from the skillet and let it rest for a minute. Slice in half, garnish if desired, and enjoy!
