2 cans of young green jackfruit in brine or water (not syrup)
1 large onion, finely chopped
4 cloves of garlic, minced
1 tablespoon olive oil
1 cup of BBQ sauce (store-bought or homemade)
1 tablespoon soy sauce or tamari
1 tablespoon apple cider vinegar
Salt and pepper to taste
8 whole grain or gluten-free burger buns
Your favorite sandwich toppings (e.g., coleslaw, pickles, jalapeños)
Instructions
Begin by draining the jackfruit cans and rinsing the pieces under cold water. Pat the jackfruit dry with a paper towel.
Shred the jackfruit into pulled-like strands using your fingers or a fork.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.
Add the shredded jackfruit to your skillet. Cook for about 5 minutes, stirring occasionally.
In a small bowl, mix together the BBQ sauce, soy sauce, and apple cider vinegar. Pour this mixture into the skillet and stir until all the jackfruit is coated.
Reduce the heat to low and cover the skillet. Allow the jackfruit to simmer for 10-15 minutes, stirring occasionally.
