Ingredients

Scale
  • 2 cans of young green jackfruit in brine or water (not syrup)
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 cup of BBQ sauce (store-bought or homemade)
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 8 whole grain or gluten-free burger buns
  • Your favorite sandwich toppings (e.g., coleslaw, pickles, jalapeños)

  • Instructions

  • Begin by draining the jackfruit cans and rinsing the pieces under cold water. Pat the jackfruit dry with a paper towel.
  • Shred the jackfruit into pulled-like strands using your fingers or a fork.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  • Add the shredded jackfruit to your skillet. Cook for about 5 minutes, stirring occasionally.
  • In a small bowl, mix together the BBQ sauce, soy sauce, and apple cider vinegar. Pour this mixture into the skillet and stir until all the jackfruit is coated.
  • Reduce the heat to low and cover the skillet. Allow the jackfruit to simmer for 10-15 minutes, stirring occasionally.
  • Toast the burger buns slightly. Pile on a generous serving of BBQ jackfruit and top with your favorite toppings.
  • Serve warm and enjoy!
