1 pound of beef sirloin or tenderloin
8 ounces of mushrooms
1 medium onion
2 cloves of garlic
1 cup of beef broth
1 tablespoon of Worcestershire sauce
1 cup of sour cream
2 tablespoons of all-purpose flour
Salt and pepper
2 tablespoons of olive oil or butter
Instructions
Slice the beef into thin strips, about 1-inch thick.
In a large skillet, heat 1 tablespoon of olive oil or butter over medium-high heat. Add the beef strips and season with salt and pepper. Cook until browned, about 2-3 minutes per side, then remove from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil or butter. Add the sliced onions and sauté until they are translucent, about 5 minutes. Add the garlic and mushrooms, cooking until the mushrooms are tender, about another 5-7 minutes.
Sprinkle the flour over the mushroom mixture, stirring to combine, and cook for an additional minute. Gradually pour in the beef broth, scraping any brown bits from the bottom of the skillet. Stir in the Worcestershire sauce.
Return the browned beef to the skillet, stirring to coat it in the sauce. Reduce heat and simmer for about 5 minutes.
Remove from heat and stir in the sour cream until fully incorporated. Adjust seasoning with salt and pepper if needed.
Serve the Beef Stroganoff over egg noodles, rice, or mashed potatoes, garnished with fresh parsley or chives.
