  • Instructions

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  • In a medium bowl, whisk together the whole wheat flour, brown sugar, baking soda, salt, cinnamon, and nutmeg until evenly combined.
  • In a separate large mixing bowl, mix the pureed beets, eggs, vegetable oil, and vanilla extract until smooth and well incorporated.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix; a few lumps are perfectly fine.
  • If using, fold in any optional additions like nuts or chocolate chips at this stage.
  • Scoop the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove from the oven and let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
