  • 1 cup sweet corn (canned or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 avocado, diced
  • Optional: 1/2 teaspoon cumin
  • Optional: 1 jalapeño, diced
  • Special garnishes: Feta or Cotija cheese, lime wedges, sliced radishes

  • Instructions

  • In a large mixing bowl, combine the drained black beans and sweet corn.
  • Add the diced red bell pepper, finely chopped red onion, and halved cherry tomatoes.
  • In a separate bowl, whisk together lime juice, olive oil, cumin (if using), and salt and pepper.
  • Pour the dressing over the salad and toss gently.
