Scale
  • 1 pound dried black-eyed peas
  • 1 smoked turkey leg
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 bay leaf (optional)
  • Chopped carrots or celery (optional)
  • Hot sauce (optional)
  • Chopped green onions (for garnish)
  • Fresh parsley (for garnish)

  • Instructions

  • Rinse the dried black-eyed peas under cold water to remove any dust or small stones. Soak them in water for at least a few hours or overnight.
  • In a large pot, heat a splash of oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent. Toss in minced garlic and stir for an additional minute until fragrant.
  • Drain the soaked peas and add them to the pot with the smoked turkey leg, chicken broth, water, thyme, paprika, salt, and pepper. Stir and bring to a boil.
  • Once boiling, reduce heat to low and cover the pot. Simmer for about 1.5 hours until the peas are tender.
  • Remove the turkey leg, let cool, debone, chop meat into bite-sized pieces, and return it to the pot. Adjust seasoning as necessary.
  • Ladle into bowls, garnish with chopped green onions or parsley, and serve hot.
