1 pound dried black-eyed peas
1 smoked turkey leg
1 medium onion, diced
2 cloves garlic, minced
4 cups chicken broth
2 cups water
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
1 bay leaf (optional)
Chopped carrots or celery (optional)
Hot sauce (optional)
Chopped green onions (for garnish)

Instructions
Rinse the dried black-eyed peas under cold water to remove any dust or small stones. Soak them in water for at least a few hours or overnight.
In a large pot, heat a splash of oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent. Toss in minced garlic and stir for an additional minute until fragrant.
Drain the soaked peas and add them to the pot with the smoked turkey leg, chicken broth, water, thyme, paprika, salt, and pepper. Stir and bring to a boil.
Once boiling, reduce heat to low and cover the pot. Simmer for about 1.5 hours until the peas are tender.
Remove the turkey leg, let cool, debone, chop meat into bite-sized pieces, and return it to the pot. Adjust seasoning as necessary.
