  • 1 cup Espresso or strong coffee
  • ½ cup Sugar
  • 1 tsp Vanilla extract

  • Instructions

  • In a large mixing bowl, whisk the mascarpone cheese and sugar together until smooth and creamy.
  • In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture, along with the vanilla extract.
  • Prepare a cup of strong espresso or coffee and let it cool slightly. If desired, mix in a splash of cherry liqueur.
  • Dip each ladyfinger briefly into the coffee, ensuring they’re moistened but not soggy.
  • In a 9×9 inch dish, layer half of the soaked ladyfingers at the bottom.
  • Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  • Spread half of the cherry pie filling over the mascarpone layer.
  • Repeat the layering process with the remaining ladyfingers, mascarpone, and cherry filling.
  • Finish with a dusting of cocoa powder over the top layer.
