24 Ladyfingers (Savoiardi)
1 cup Mascarpone cheese
1 cup Heavy cream
¼ cup Cocoa powder
1 jar (14 oz) Cherry pie filling
1 cup Espresso or strong coffee
½ cup Sugar
1 tsp Vanilla extract
Instructions
In a large mixing bowl, whisk the mascarpone cheese and sugar together until smooth and creamy.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture, along with the vanilla extract.
Prepare a cup of strong espresso or coffee and let it cool slightly. If desired, mix in a splash of cherry liqueur.
Dip each ladyfinger briefly into the coffee, ensuring they’re moistened but not soggy.
In a 9×9 inch dish, layer half of the soaked ladyfingers at the bottom.
Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
Spread half of the cherry pie filling over the mascarpone layer.
Repeat the layering process with the remaining ladyfingers, mascarpone, and cherry filling.
Finish with a dusting of cocoa powder over the top layer.
Cover with plastic wrap and refrigerate for at least 4-6 hours or overnight for the best flavor.
