2 large eggs
1 cup buttermilk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup hot water
2 cups fresh blackberries (for topping)
1 cup heavy whipping cream (for frosting)
½ cup powdered sugar (for frosting)
1 teaspoon vanilla extract (for frosting)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Create a well in the center and add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until just combined, then gradually fold in the hot water.
Grease and flour two 9-inch round cake pans. Divide the batter evenly between the pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack.
While the cakes are cooling, whip the heavy cream in a bowl until it begins to thicken. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
Once the cakes have cooled completely, place one layer on a serving plate. Spread a generous amount of whipped cream over the top, followed by a handful of fresh blackberries. Place the second layer on top and repeat the process. Top the final layer with more whipped cream and blackberries.
