1/2 cup unsalted butter (cold, cubed)
1 cup fresh blueberries
3/4 cup buttermilk (or milk with a tablespoon of vinegar added)
1 teaspoon cinnamon (optional)
1 tablespoon lemon zest (optional)

Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and sugar until thoroughly combined.
Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
Gently fold in the fresh blueberries, taking care not to break them.
Make a well in the center of your mixture and pour in the buttermilk. Stir until just combined, being cautious not to overmix.
Turn the dough out onto a floured surface and gently knead it 2-3 times until it holds together. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a biscuit cutter or a sharp knife.
