2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
8 ounces cream cheese, softened
¼ cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
1 cup fresh blueberries
Instructions
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add in the eggs, one at a time, followed by the vanilla extract. Mix until fully combined.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
In a separate bowl, beat the softened cream cheese and granulated sugar until smooth. Add the egg yolk and vanilla extract, and mix until well combined.
Gently fold in the blueberries.
Drop dollops of cookie dough onto prepared baking sheets, leaving space in between each cookie.
Add a spoonful of cheesecake filling on top of each dollop of cookie dough and gently swirl together using a toothpick.
Bake for 10-12 minutes or until edges are golden brown.
Allow to cool on baking sheets for about 5 minutes before transferring to wire racks.
