4 cups fresh or frozen blueberries
½ cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon ground cinnamon (optional)
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter (melted)
¾ cup milk (or a dairy alternative)
1 egg (beaten)
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon (if using). Gently toss until the blueberries are coated. Pour this mixture into a greased 9×13 inch baking dish.
In another bowl, whisk together the flour, baking powder, and salt. Then, add in the melted butter, milk, and beaten egg. Mix until just combined; don’t overmix! The batter should be lumpy.
