Ingredients

  • 1 cup of granulated sugar
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of cinnamon (optional)
  • Chopped fresh mint (optional)
  • Zest of a lemon or orange (for garnish)

  • Instructions

  • Rinse the blueberries under cold water and remove any stems or leaves.
  • In a saucepan, combine the blueberries, sugar, lemon juice, and salt over medium heat. Stir gently to dissolve the sugar.
  • Once the mixture starts bubbling, reduce the heat to low and let it simmer for about 10-15 minutes until it thickens.
  • Just before removing from heat, stir in the vanilla extract.
  • Test the consistency by placing a spoonful on a plate and freezing it for a minute. If it holds its shape, it's ready.
  • Pour the hot jam into sterilized jars and seal while warm. Let cool at room temperature, then refrigerate.
