6 cups blueberries
¾ cup sugar
¼ cup all-purpose flour
2 tablespoons lemon juice
1 teaspoon cinnamon
2 tablespoons butter
1 prepared or homemade pie crust
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, combine the blueberries, sugar, flour, lemon juice, and cinnamon. Gently toss to coat the berries evenly and set aside to macerate for about 10-15 minutes.
While the blueberries are resting, roll out your pie crust and place it in a 9-inch pie pan. Make sure to leave some overhang along the edges.
Pour the blueberry mixture into the pie crust, spreading it evenly. Dot the top with small pieces of butter.
Roll out the second pie crust and either cover the pie entirely or cut it into strips to create a lattice crust.
Trim the overhanging crust and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape if making a full crust.
Bake the pie for 15 minutes in the preheated oven, then reduce the temperature to 350°F (175°C) and bake for an additional 30-40 minutes or until the crust is golden brown and the filling is bubbly.
Let the pie cool for at least two hours before slicing.
