4 pieces salmon fillets (about 6 oz each)
2 fresh peaches, sliced
1/4 cup bourbon
2 tablespoons brown sugar
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon fresh thyme, chopped
1 tablespoon lemon juice
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, combine bourbon, brown sugar, olive oil, lemon juice, chopped thyme, salt, and pepper. Stir until the sugar has dissolved.
Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes (or up to an hour for more flavor).
