Ingredients
Scale
8 ounces of bow tie pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup bell pepper, diced (any color)
1/2 cup red onion, finely chopped
1/2 cup black olives, sliced
1 cup mozzarella balls (bocconcini), halved
1/4 cup fresh parsley, chopped
1/2 cup Italian dressing (store-bought or homemade)
Salt and pepper, to taste
Instructions
1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add in the bow tie pasta and cook according to the package instructions, around 10-12 minutes, until al dente. Stir occasionally to prevent sticking.
2. Drain and Cool: Drain the pasta in a colander and rinse under cold water to halt the cooking process. Let it cool while you prepare the rest of the ingredients.
3. Prep the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, bell pepper, red onion, and black olives. If using fresh mozzarella balls, cut them in half.
4. Combine Ingredients: In a large mixing bowl, combine the cooled pasta, chopped vegetables, mozzarella, and parsley. Toss gently to distribute evenly.
5. Dress the Salad: Pour the Italian dressing over the pasta mixture. Toss until everything is well-coated. Season with salt and pepper to taste.
6. Chill Before Serving: If possible, let the salad chill in the refrigerator for at least 30 minutes before serving.
