Instructions
In a mixing bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, whisk the egg, milk, and melted butter. Gradually add the wet ingredients to the dry mixture, stirring until just combined.
Preheat a non-stick skillet or griddle over medium heat. Lightly grease if necessary.
Using a tablespoon or small ice cream scoop, drop the batter onto the skillet, leaving space between each one. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes or until golden brown.
Transfer the pancakes to a plate, and serve hot with your choice of garnishes.
