8 oz. pasta (fettuccine or your choice)
½ cup unsalted butter
1 cup pumpkin puree
1 cup heavy cream
1 cup grated parmesan cheese
Salt and pepper, to taste
Fresh sage (optional)
Red pepper flakes (optional)
Chicken or shrimp (optional)
Spinach or kale (optional)
Instructions
Start by cooking the pasta according to the package instructions until al dente in a large pot. Reserve about a cup of the pasta cooking water and then drain the rest.
In the same pot, melt the butter over medium heat. Continue to cook the butter, stirring frequently, until it turns a rich golden brown and starts to smell nutty. This usually takes about 5-7 minutes. Be careful not to burn it!
Add the pumpkin puree to the browned butter and stir to incorporate. Let it cook for a couple of minutes to remove some of the moisture, enhancing the flavor.
Pour in the heavy cream and stir until combined, allowing it to come to a gentle simmer.
Mix in the grated parmesan cheese and season with salt and pepper to taste. Stir until the cheese is fully melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water one tablespoon at a time until desired consistency is reached.
Toss the cooked pasta with the sauce until well combined. If using, add chopped fresh sage at this time.
Serve immediately, garnished with additional parmesan and sage if desired.
