1 cup brown lentils
2 medium sweet potatoes (peeled and diced)
1 onion (chopped)
3 cloves garlic (minced)
1 can coconut milk (400ml)
2 cups vegetable broth
2 tablespoons curry powder
1 teaspoon cumin
Salt and pepper to taste
Instructions
In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the diced sweet potatoes, brown lentils, curry powder, cumin, and season with salt and pepper. Stir to coat the vegetables and lentils in the spices.
Pour in the coconut milk and vegetable broth, bringing the mixture to a gentle boil.
Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender.
Taste and adjust seasoning as desired. If the consistency is too thick, add a bit more broth or water to reach your desired thickness.
Once cooked, serve hot, garnished with your choice of cilantro, crushed peanuts, or lime wedges.
