1 cup Brussels sprouts, trimmed and halved
2 cups kale, chopped
1 cup corn kernels
1 medium onion, diced

1 cup vegetable broth

Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute.
Toss in the halved Brussels sprouts, chopped kale, and corn kernels. Sauté for about 5-7 minutes until the veggies begin to soften.

Place your pie crust in a 9-inch pie dish. Allow the edges to hang over the sides.
