  • Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute.
  • Toss in the halved Brussels sprouts, chopped kale, and corn kernels. Sauté for about 5-7 minutes until the veggies begin to soften.
  • Add the vegetable broth and heavy cream to the skillet. Season with salt and pepper. Let the mixture simmer for about 10 minutes, stirring occasionally until thickened.
  • Place your pie crust in a 9-inch pie dish. Allow the edges to hang over the sides.
  • Carefully spoon the vegetable mixture into the pie crust, using a spatula to ensure it is evenly spread.
  • Fold the overhanging crust over the filling, crimping the edges as desired. Place the pie in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown.
