4 large bell peppers
2 cups cooked chicken, shredded
1/2 cup buffalo sauce
1/2 cup cream cheese
1 cup shredded cheese (cheddar or mozzarella)
1/4 cup celery, diced
1/4 cup green onions, sliced
Salt and pepper, to taste
Optional: Blue cheese crumbles, ranch dressing, jalapeños for added flavor
Instructions
Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheese, diced celery, green onions, salt, and pepper. Mix until well combined.
Spoon the filling generously into each bell pepper and pack them tightly.
Place the stuffed peppers in a baking dish, pour a little water into the bottom for steam, cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 5-10 minutes until cheese bubbles.
Let them cool for a minute, drizzle with ranch or extra buffalo sauce, garnish and serve.
