  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup celery, diced
  • 1/4 cup green onions, sliced
  • Salt and pepper, to taste
  • Optional: Blue cheese crumbles, ranch dressing, jalapeños for added flavor

  • Instructions

  • Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  • In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheese, diced celery, green onions, salt, and pepper. Mix until well combined.
  • Spoon the filling generously into each bell pepper and pack them tightly.
  • Place the stuffed peppers in a baking dish, pour a little water into the bottom for steam, cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 5-10 minutes until cheese bubbles.
  • Let them cool for a minute, drizzle with ranch or extra buffalo sauce, garnish and serve.
