2 cups Butternut Squash, cubed
8 ounces Pasta (elbow or any pasta of your choice)
2 cups Sharp Cheddar Cheese, shredded
1 cup Mozzarella Cheese, shredded
2 cups Milk
3 tablespoons Butter
2 tablespoons Flour
Salt and Pepper to taste
A pinch of Nutmeg
Optional: Red Pepper Flakes, Cooked Bacon or Ham, Fresh Spinach or Kale
Instructions
Preheat your oven: Set it to 350°F (175°C).
Prepare the Butternut Squash: Peel, deseed, and cube the butternut squash. Spread it out on a baking sheet and drizzle with olive oil, salt, and pepper. Roast for about 25-30 minutes or until tender and slightly caramelized.
Cook the pasta: Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside.
Make the cheese sauce: In a large saucepan, melt butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbly. Gradually add the milk, whisking continuously until thickened (about 5 minutes).
Add the cheeses: Reduce heat to low, stir in the cheddar and mozzarella until melted and smooth. Add nutmeg, salt, and pepper to taste.
Combine: In a large mixing bowl, combine the cooked pasta and roasted butternut squash. Pour the cheese sauce over the mixture and stir until well coated.
Transfer to a baking dish: Pour the mac and cheese into a greased 9×13-inch baking dish. Smooth the top.
Add toppings: If desired, sprinkle with panko bread crumbs and additional cheese for a crunchy topping.
Bake: Place in the oven and bake for 20-25 minutes or until bubbly and golden brown.
