2 tablespoons Cajun seasoning
2 tablespoons olive oil

Instructions
Preheat your oven to 425°F (220°C).
Trim the cauliflower and carefully slice it into thick steaks, around 1-inch thick.
In a small bowl, mix the olive oil with the Cajun spices, salt, and pepper.
Lay the cauliflower steaks on a baking sheet lined with parchment paper and brush both sides with the Cajun oil mixture.
Roast in the oven for about 25-30 minutes, flipping halfway through until golden and crispy.
Prepare the chimichurri by blending the parsley, garlic, olive oil, red wine vinegar, and red pepper flakes in a food processor until smooth.
