4 cups water
1 cup shredded sharp cheddar cheese
2 tablespoons butter
Salt to taste
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 bell pepper, diced
1/2 onion, chopped
2 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon Worcestershire sauce
Fresh parsley, chopped (for garnish)
Instructions
In a pot, bring the 4 cups of water to a boil and season with salt. Whisk in the grits. Reduce the heat to low and simmer, stirring frequently for about 15-20 minutes, until thick and creamy.
Stir in butter and shredded cheddar cheese until fully melted into the grits.
While the grits cook, heat olive oil in a skillet over medium heat. Add onion and bell pepper, sauté for about 3-4 minutes until tender. Add garlic for the last minute.
Add shrimp to the skillet, sprinkle Cajun seasoning over, and sauté until they’re pink and opaque—about 3-5 minutes.
Pour in chicken broth and Worcestershire sauce, stirring to combine. Let it simmer for a couple of minutes until it thickens slightly.
Spoon creamy grits into bowls and top with Cajun shrimp. Garnish with fresh parsley.
