  • Preheat your oven to 375°F (190°C). Grab a large oven-safe skillet and drizzle the olive oil, swirling it around to coat the bottom.

  • Over medium heat, add cherry tomatoes to the skillet. Cook for 2-3 minutes until softened.
  • Pour the egg mixture over the tomatoes in the skillet. Cook for 2-3 minutes until the edges are set.
