1/4 cup sour cream
1 cup granulated sugar (for caramel sauce)
6 tablespoons unsalted butter (for caramel sauce)
1/2 cup heavy cream (for caramel sauce)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9-inch round springform pan.
Melt the unsalted butter in a large mixing bowl. Add sugar and mix until well combined. Then, blend in eggs and vanilla until fully incorporated.
Sift in the flour, cocoa powder, and salt. Gently fold these dry ingredients into the wet mixture and pour the brownie batter into the prepared springform pan.
Bake for about 20-25 minutes, or until a toothpick comes out with a few moist crumbs. Let it cool.
In a separate bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix well. Incorporate vanilla and eggs one at a time, then add sour cream and mix until combined.
Pour the cheesecake batter over the cooled brownie layer and smooth the top. Tap the pan to release air bubbles. Bake for 70-75 minutes, until the edges are set and the center has a slight jiggle.
Cool in the oven with the door cracked for an hour, then refrigerate for at least 4 hours.
For the caramel sauce, heat sugar in a saucepan until melted and amber in color. Add butter, and then slowly pour in cream, stirring until combined. Let it cool before drizzling it over the cheesecake.
Remove the springform pan, drizzle with caramel, garnish, slice, and serve.
