  • 1/4 cup sour cream
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)

  • Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round springform pan.
  • Melt the unsalted butter in a large mixing bowl. Add sugar and mix until well combined. Then, blend in eggs and vanilla until fully incorporated.
  • Sift in the flour, cocoa powder, and salt. Gently fold these dry ingredients into the wet mixture and pour the brownie batter into the prepared springform pan.
  • Bake for about 20-25 minutes, or until a toothpick comes out with a few moist crumbs. Let it cool.
  • In a separate bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix well. Incorporate vanilla and eggs one at a time, then add sour cream and mix until combined.
  • Pour the cheesecake batter over the cooled brownie layer and smooth the top. Tap the pan to release air bubbles. Bake for 70-75 minutes, until the edges are set and the center has a slight jiggle.
  • Cool in the oven with the door cracked for an hour, then refrigerate for at least 4 hours.
  • For the caramel sauce, heat sugar in a saucepan until melted and amber in color. Add butter, and then slowly pour in cream, stirring until combined. Let it cool before drizzling it over the cheesecake.
