Ingredients

1 cup of all-purpose flour
1 tablespoon of baking powder
¼ teaspoon of salt
1 teaspoon of ground cinnamon
½ teaspoon of ground nutmeg
1 cup of grated carrots
1 large egg
1 cup of milk
2 tablespoons of melted butter or coconut oil
2 tablespoons of brown sugar
½ cup of chopped walnuts or pecans (optional)
½ cup of raisins (optional)
Instructions
In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
In another bowl, beat the egg, then add in the milk, melted butter, and brown sugar. Whisk until well blended.
Pour the wet ingredients into the dry ingredients, stirring gently until combined. A few lumps are fine.
Gently fold in the grated carrots (and nuts or raisins if using).
Preheat a non-stick skillet over medium heat and lightly grease it.
Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form and edges look set, about 2-3 minutes. Flip and cook until golden brown.
Repeat with remaining batter, keeping pancakes warm in a low oven.
Serve stacked with maple syrup, butter, or your favorite garnishes.
