Ingredients

  • 1 cup of grated carrots
  • 1 large egg
  • 1 cup of milk
  • 2 tablespoons of melted butter or coconut oil
  • 2 tablespoons of brown sugar
  • ½ cup of chopped walnuts or pecans (optional)
  • ½ cup of raisins (optional)

  • Instructions

  • In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, beat the egg, then add in the milk, melted butter, and brown sugar. Whisk until well blended.
  • Pour the wet ingredients into the dry ingredients, stirring gently until combined. A few lumps are fine.
  • Gently fold in the grated carrots (and nuts or raisins if using).
  • Preheat a non-stick skillet over medium heat and lightly grease it.
  • Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form and edges look set, about 2-3 minutes. Flip and cook until golden brown.
  • Repeat with remaining batter, keeping pancakes warm in a low oven.
  • Serve stacked with maple syrup, butter, or your favorite garnishes.
