1 lb Carrots
1–2 inches Fresh Ginger, peeled and grated
1 medium Onion, chopped
2 cloves Garlic, minced
4 cups Vegetable Broth
1 cup Coconut Milk
2 tablespoons Olive Oil
Salt and Pepper
Instructions
Wash, peel, and chop the carrots into small pieces for even cooking. Set aside.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent and fragrant.
Add the minced garlic and grated ginger to the pot, stirring for another minute until softened and aromatic.
Next, add the chopped carrots to the pot and stir everything together for a couple of minutes.
Pour in the vegetable broth, bring the mixture to a boil. Reduce the heat and cover, letting it simmer for 20-25 minutes or until the carrots are tender.
Remove the pot from heat. Using an immersion blender, blend the soup until silky smooth.
Stir in the coconut milk, and season with salt and pepper to taste.
Serve hot, garnished with toasted pumpkin seeds, coconut cream, or fresh herbs.
