Ingredients

  • 1 lb Carrots
  • 12 inches Fresh Ginger, peeled and grated
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 2 tablespoons Olive Oil
  • Salt and Pepper

  • Instructions

  • Wash, peel, and chop the carrots into small pieces for even cooking. Set aside.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent and fragrant.
  • Add the minced garlic and grated ginger to the pot, stirring for another minute until softened and aromatic.
  • Next, add the chopped carrots to the pot and stir everything together for a couple of minutes.
  • Pour in the vegetable broth, bring the mixture to a boil. Reduce the heat and cover, letting it simmer for 20-25 minutes or until the carrots are tender.
  • Remove the pot from heat. Using an immersion blender, blend the soup until silky smooth.
  • Stir in the coconut milk, and season with salt and pepper to taste.
  • Serve hot, garnished with toasted pumpkin seeds, coconut cream, or fresh herbs.
