1 lb fresh white fish (like tilapia or snapper)
1 cup fresh lime juice
1 ripe avocado
1 cup diced tomatoes
1/2 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1–2 jalapeños, minced
Salt and pepper to taste
Optional Additions: 1/2 cup corn, 1/2 cup mango or pineapple
For the Chips: 6 corn tortillas, Oil for frying (canola or vegetable), Salt
Instructions
Prepare the Fish: Begin by cutting your fresh fish into small, even cubes. This ensures that every piece marinates nicely.
Marinate: Place the fish in a glass bowl and pour the lime juice over it. Cover and refrigerate for about 30-40 minutes.
Chop & Mix: While the fish is marinating, chop your tomatoes, red onion, cilantro, and minced jalapeños.
Combine: Once the fish is opaque and firm to the touch, drain excess lime juice from the bowl. Gently fold in the chopped ingredients and diced avocado.
Make the Chips: In a skillet, heat enough oil to cover the bottom. Fry your corn tortillas until golden and crisp.
