Instructions
Prep the ingredients: Begin by peeling and dicing the potatoes into small cubes. Chop the onion and mince the garlic.
Sauté the aromatics: In a large soup pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.
Add the potatoes and broth: Toss the diced potatoes into the pot, mixing well with the sautéed onion and garlic. Pour in the chicken or vegetable broth, then increase the heat to bring it to a boil.
