1 cup shredded cheese (cheddar or mozzarella)
2 large eggs
1/2 cup almond flour

Instructions
Preheat your waffle maker according to the manufacturer’s instructions.
Remove the leaves and stems from the cauliflower and cut it into florets. Steam or boil it until tender, about 5-7 minutes.
After cooking, drain any excess water and let the cauliflower cool slightly.
In a food processor, combine the cauliflower florets and pulse until it resembles rice or mashed potatoes. You should have about 2 cups of cauliflower rice.
In a large mixing bowl, combine the cauliflower rice, shredded cheese, eggs, almond flour, garlic powder, salt, and pepper. Mix until thoroughly combined.
