12 ounces of pasta (penne or fettuccine work well)
1 cup of homemade or store-bought basil pesto
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup cherry tomatoes, halved (optional)
1/4 cup pine nuts, toasted (optional)
Salt and pepper to taste
Fresh basil for garnish
Instructions
In a large pot, bring salted water to a rolling boil over high heat. Add your chosen pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water for later use, then drain the pasta in a colander and set aside.
In the same pot (or a large skillet), reduce the heat to medium and pour in the heavy cream. Stir it gently for a couple of minutes until warmed, then add the pesto and mix well to create a green sauce.
Add in the shredded mozzarella and grated Parmesan cheese, stirring constantly until melted and creamy. If needed, add reserved pasta water, one tablespoon at a time, until reaching desired consistency.
Toss the cooked pasta in the sauce until well-coated. If desired, add cherry tomatoes or any other veggies.
Transfer to serving bowls or a platter, sprinkle with toasted pine nuts and garnish with fresh basil.
