Ingredients

  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (basil or parsley), chopped
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Optional: Ground meat (beef or turkey), spices, vegetables

  • Instructions

  • Preheat the oven to 375°F (190°C).
  • Carefully slice the tops off each tomato and scoop out the seeds and pulp. Drain upside down on a paper towel.
  • In a skillet, heat olive oil over medium heat. Sauté chopped onions and garlic until translucent.
  • In a bowl, mix cooked rice, sautéed onions, shredded cheese, chopped herbs, salt, and pepper.
  • Stuff the hollow tomatoes with the cheesy rice mixture.
  • Bake in a dish, optionally with water at the bottom, for 25-30 minutes or until tomatoes are tender and cheese is bubbling.
