  • 1 tbsp sugar (for sprinkling on top)

  • Instructions

  • In a large bowl, whisk together the flour, salt, and sugar.
  • Add the cold, cubed butter. Using a fork or pastry cutter, blend until the mixture resembles coarse crumbs.
  • Gradually mix in the ice water, one tablespoon at a time, until the dough just comes together.
  • Divide the dough into two equal parts, shape each into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  • In a large mixing bowl, combine the sliced peaches, sugar, flour, cinnamon, lemon juice, and vanilla extract. Stir gently to combine all ingredients, ensuring the peaches are coated.
  • Let the mixture sit for about 15-20 minutes to allow the juices to develop.
  • Preheat your oven to 425°F (220°C).
  • Roll out one disk of chilled dough on a floured surface to fit into your pie dish. Transfer the dough to the pie dish and trim any excess.
