Description
Savor Cherry Buttercream Shortbread with this easy recipe. Perfect treat for any occasion, blending sweet flavors for a delightful dessert experience.
Ingredients
Scale
2 cups of all-purpose flour
1/2 cup of powdered sugar
1 cup of unsalted butter, softened
1 cup of cherries, pitted and chopped
1 teaspoon of vanilla extract
1/2 cup of unsalted butter, softened (for buttercream)
2 cups of powdered sugar (for buttercream)
2 tablespoons of cherry juice (for buttercream)
Instructions
Preheat your oven to 350°F (175°C).
Prepare your baking dish—a 9×13 inch pan works beautifully. Grease it lightly or line it with parchment paper.
In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
Gradually add in the flour, mixing until well incorporated. Fold in the chopped cherries and vanilla extract.
Press the dough evenly into the prepared baking dish.
Bake for 20-25 minutes or until the edges are just golden. Let it cool in the pan.
Meanwhile, whip up the buttercream by beating the softened butter with powdered sugar until fluffy. Add the cherry juice until you reach your desired consistency.
Once the shortbread has cooled, spread a layer of buttercream on top.
Slice into squares and garnish with fresh cherries or mint leaves if desired.
Notes
A delightful treat that combines the buttery richness of shortbread with the vibrant sweetness of cherries, topped off with a dreamy buttercream frosting.
