2 cups fresh or frozen cherries, pitted
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
1/4 teaspoon salt
1 tablespoon butter, cut into small pieces
1 package refrigerated pie crusts (or homemade, if you prefer)
1 egg, beaten (for egg wash)
Instructions
In a medium saucepan, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, almond extract, and salt. Cook over medium heat, stirring gently until the mixture starts to bubble and thicken, about 5 to 8 minutes. Once thickened, remove from heat and let it cool slightly.
While your filling cools, preheat your oven to 425°F (220°C).
On a lightly floured surface, roll out one of the pie crusts to fit a 9-inch pie pan. Carefully transfer the crust to the pan and trim any excess hanging over the edges.
Pour the cooled cherry mixture into the prepared crust, and dot with pieces of butter on top for added richness.
Roll out the second pie crust, then place it over the filling. Cut slits into the top crust for a lattice design or place it whole, making sure to cut a few vent holes.
Press the edges of the top crust into the bottom crust to seal, then crimp or flute the edges. Brush the top with a beaten egg.
Bake the pie in the preheated oven for 25 to 30 minutes, or until the crust is golden brown and the filling is bubbly.
Once baked, allow the pie to cool for at least one hour before serving.
