4 boneless, skinless chicken breasts
1 pound baby potatoes, halved
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
3 tablespoons Dijon mustard
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken and sear for about 4-5 minutes on each side until golden brown.
Add the minced garlic and stir for about 30 seconds until fragrant.
Add the halved baby potatoes to the skillet and stir to combine.
In a bowl, whisk together the heavy cream, Dijon mustard, thyme, and a pinch of salt and pepper. Pour this over the chicken and potatoes in the skillet.
Transfer the skillet to the oven and roast for about 25-30 minutes, or until the chicken is cooked through.
Let it rest for about 5 minutes, garnish with fresh parsley or chives, and serve hot.
