  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken and sear for about 4-5 minutes on each side until golden brown.
  • Add the minced garlic and stir for about 30 seconds until fragrant.
  • Add the halved baby potatoes to the skillet and stir to combine.
  • In a bowl, whisk together the heavy cream, Dijon mustard, thyme, and a pinch of salt and pepper. Pour this over the chicken and potatoes in the skillet.
  • Transfer the skillet to the oven and roast for about 25-30 minutes, or until the chicken is cooked through.
  • Let it rest for about 5 minutes, garnish with fresh parsley or chives, and serve hot.
