1 pound ground chicken
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 egg
1 tablespoon fresh parsley, chopped
Salt and pepper, to taste
2 tablespoons olive oil
1/2 cup chicken broth
1/4 cup lemon juice
2 tablespoons capers
Zest of one lemon
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, parsley, salt, and pepper. Mix until just combined; be careful not to overmix.
Form the mixture into 1-inch meatballs and place them on a lined baking sheet.
