Ingredients
Scale
2 cups cooked chicken, shredded
1 cup poblano peppers, diced
1 can (15 oz) black beans, rinsed and drained
1 medium onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 teaspoon cumin
1 teaspoon dried oregano
Salt and pepper, to taste
1–2 fresh jalapeños, diced (optional)
1 cup corn kernels (optional)
1 tablespoon lime juice (optional)
Chopped fresh cilantro (for garnish)
Sour cream or Greek yogurt (for garnish)
Crumbled tortilla chips (for garnish)
Instructions
Prepare the Ingredients: Shred the cooked chicken, dice the poblano peppers, and chop the onion and garlic.
Sauté the Vegetables: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Then add the minced garlic and diced poblanos, cooking for another 2-3 minutes until the peppers begin to soften.
Add the Chicken and Beans: Stir in the shredded chicken and drained black beans, allowing them to warm through for about 2 minutes.
Pour in the Broth: Add the chicken broth, cumin, oregano, salt, and pepper. Stir well, and bring the mixture to a boil.
Simmer the Soup: Reduce the heat to low and let the soup simmer for 20-25 minutes, allowing all the flavors to meld together beautifully.
Adjust Seasoning: Taste and adjust the seasoning, adding more salt, pepper, or spices if necessary. If using, stir in lime juice for that refreshing brightness.
Serve: Ladle the soup into bowls and top with your favorite garnishes like cilantro, sour cream, and tortilla chips.
