Ingredients

2 lbs boneless, skinless chicken thighs
4 tsp ground cumin
2 tsp smoked paprika
1 tsp ground turmeric
1 ½ tsp garlic powder
Salt and pepper to taste
¼ cup olive oil
2 tbsp apple cider vinegar
4 large pita breads
Your favorite toppings (lettuce, tomatoes, onions, etc.)
Instructions
Prep the Marinade: In a bowl, mix together cumin, paprika, turmeric, garlic powder, salt, pepper, olive oil, and apple cider vinegar. It should smell wonderfully fragrant!
Marinate the Chicken: Place the chicken thighs into a large zip-top bag or bowl and pour the marinade over them. Massage those lovely flavors into the meat and let it chill in the fridge for at least 1 hour (or overnight for more flavor!).
Preheat the Oven: Set your oven to 425°F (220°C).
Cook the Chicken: Spread the marinated chicken on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until the chicken is cooked through.
Rest & Slice: Let the chicken rest for 5-10 minutes after removing it from the oven. Then, slice it into strips.
Warm the Pita: While the chicken rests, warm up your pita bread in the oven or skillet.
Assemble Your Shawarma: Lay down the sliced chicken on the pita, top with fresh veggies, garlic sauce, and any additional toppings.
