  • 4 large poblano peppers
  • 1 pound cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Optional: black beans, jalapeños, corn, avocado slices, crumbled feta or queso fresco, sour cream

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Carefully slice the tops off the poblano peppers and remove seeds. Rinse and set aside.
  • In a large skillet, heat a bit of oil over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Then, add minced garlic and sauté for another minute.
  • Stir in the shredded chicken, cooked rice, cumin, chili powder, salt, and pepper. Mix well. Fold in half of the cheese.
  • Gently fill each poblano pepper with the chicken mixture, pressing down to ensure it’s packed but not overly stuffed.
  • Place the stuffed peppers in a baking dish and sprinkle the remaining cheese on top.
  • Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and slightly golden.
  • Once done, remove from the oven, garnish with fresh cilantro and enjoy your delicious Chicken Stuffed Poblano Peppers!
