4 large poblano peppers
1 pound cooked chicken, shredded
1 cup cooked rice
1 cup shredded cheese (cheddar or Monterey Jack)
1 small onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro, for garnish
Optional: black beans, jalapeños, corn, avocado slices, crumbled feta or queso fresco, sour cream
Instructions
Preheat your oven to 375°F (190°C).
Carefully slice the tops off the poblano peppers and remove seeds. Rinse and set aside.
In a large skillet, heat a bit of oil over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Then, add minced garlic and sauté for another minute.
Stir in the shredded chicken, cooked rice, cumin, chili powder, salt, and pepper. Mix well. Fold in half of the cheese.
Gently fill each poblano pepper with the chicken mixture, pressing down to ensure it’s packed but not overly stuffed.
Place the stuffed peppers in a baking dish and sprinkle the remaining cheese on top.
Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and slightly golden.
Once done, remove from the oven, garnish with fresh cilantro and enjoy your delicious Chicken Stuffed Poblano Peppers!
