  • 2 boneless, skinless chicken breasts
  • 1 tablespoon of olive oil
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 4 bolillo rolls
  • 1 ripe avocado
  • 1 cup of shredded lettuce
  • ½ cup of pickled jalapeños
  • Lime wedges

  • Instructions

  • In a bowl, add olive oil, chili powder, cumin, salt, and pepper. Mix it all up. Place the chicken breasts in the marinade, coating them well. Let it sit for at least 30 minutes (or longer if you can!).
  • Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-7 minutes per side or until fully cooked. Once done, take it off the heat and let it rest for a few minutes.
  • While the chicken is resting, slice your bolillo rolls in half and toast them lightly.
  • On the bottom half of each bolillo, spread a generous layer of mashed avocado. Slice the chicken into strips and place it on top. Layer with lettuce and pickled jalapeños.
  • Squeeze fresh lime juice over the topped sandwiches, and sprinkle with cilantro if using. Place the top half of the roll over everything and serve.
